Date and Coconut Energy Balls

Ingredients
15-20 Pitted Medjool Dates
1 Orange
1 Tablespoon of Cinammon
1 Tablespoon of Pulsin Vegan Pea Protein Powder or ground almonds
2 Tablespoons of Crunchy Peanut Butter
1 Handful of sunflower seeds
1 Bag of desiccated coconut
1 Tablespoon of Maple Syrup for added sweetness

How? – Easy!!!
Juice the Orange, add in the cinnamon and the maple syrup and place the dates in the juice, the longer you leave them the more infused they will be.
Blend the Dates and the protein powder or ground almonds together using an electric mixer/blender, then you can manually mix in the peanut butter and sunflower seeds if you want some crunch.
Check that your mix is not too dry or too ‘wet’, if too dry, add more orange juice, if too wet, add a little protein powder or ground almons.

Make medium sized balls using your hands and roll them in the desiccated coconut.
Leave them to rest in the fridge for a couple of hours minimum.

Each one is packed full of protein so you can enjoy it on the go, pre or post work out/yoga 

DO NOT eat them all at once!!!
