Winter vegan salad


Serves 2 as a starter or one as a main.


Salad ingredients:


1 head of chicory / endive

1 Large handful of walnuts

1 Ripe peach

3-4 Spring onions


Dressing ingredients:

Freshly ground black pepper

Himalayan salt (yes, it does make a difference 🙂 

Apple cider vinegar (with The Mother if poss)

Dijon mustard (Biensur!)

Extra Virgin Olive Oil



Chop, chop, chop,

Toss, Toss, Toss,

Dress, Dress, Dress

Munch, munch munch
