Made this delicious pasta for my dear veagan friend’s Bday last night and I got a thumbs up so here’s the recipe.
1 Garlic clove
1 Red chilli
1 Bunch of basil
1 Red onion
8 Small ripe tomatoes
Enough wholemeal spaguetti for 3 hungry people
A pinch of salt
A lot of olive oil
And a Whole lotta Love
Chop all the veggies in small cubes.
Place the aubergine in the oven for 15mins, so it can ‘sweat’, I find it goes a bit soggy if you don’t do this first.
Fry the onions in olive oil 5 mins, add the garlic, chili and salt, add the courgette, once the courgette is a bit cooked add the tomatoes and at the very end add the cooked aubergine.
Leave to simmer for 10mins.
Not going to provide instructions on how to cook pasta, but once the pasta is cooked, add the pasta to the sauce and not the other way around!!! Add a spoonful of olive oil, jsut because you can and some teared basil.
For none vegans you can add Parmesan, I did and it was Delicious, if I may say so myself 🙂
