Quick and easy winter carrotts

8 large carrots
6 small red onions
1 bag of green beans
1 bulb of garlic
2 spoonfuls of cajun spices
2 spoonfuls of coconut oil
a handful of almonds

Preheat oven to 180 while you chop the carrots and onions.
Separate the garlic cloves but don’t remove the skin.
Put the carrots, onions and garlic in the oven for 20-30mins or until soft.
Cut the beans in half and boil until cooked.
Remove the carrots and onions from the oven, take the garlic out of the skin, should come out easily, careful not to burn your hands here. Mix the beans in with the rest and add some almonds for protein.

Best eaten warm but also tastes nice as a cold salad, enjoy!
