Serves: 2 very hungry people + left overs for lunch

Cooking time: 15min
Ingredients:
1 spoonful of coconut oil
2 Leeks
6-8 Mushrooms
½ bag of curly kale
½ cup of frozen green peas
1 Kallo organic Veg cube (little flavour cheat)
½ Lemon
1 cup of your choice of pasta *
*I used a Green pea and Quinoa alternative and it’s SO good + high in protein
How:
Chop all the veg (not the kale)
Light fry the leeks in the coconut oil for 4-5 minutes
Add the kale, lightly fry together for 4-5min
Add the mushrooms and the peas and lightly fry together for 4-5min
Meanwhile, boil the water and cook your pasta so it’s al dente by the time your veggies are ready
Add the cooked pasta to the veg, mix it delicately (in the pan, away from the heat, you don’t want mushy pasta)
Et voila!!!
For extra protein/flavor you can add some pine nuts
